The goal is to come out with a yolk that is soft and creamy and a white that is a perfect balance between firm and soft.
Step 1: Remove the poaching tray that houses the egg cups. Fill the pan with half an inch of water. (Remember that it is the steam that is cooking the eggs, not the water). Bring the water to a gentle boil.
Step 2: Coat each cup with a bit of non-stick spray or butter. Crack an egg into each cup, taking care to keep the yolks intact. Insert the poaching tray into the pan after the water has come to a boil and then place the lid on top. The steam cooks the eggs until your desired endpoint. Cooking normally takes between three and a half to six minutes depending on how firm you want the yolk.
Step 3: Turn the fire off and carefully remove the lid. Use the large knob in the center of the poaching tray to lift the tray out of the pan. The knob will be hot at first, so use an oven mitt or a napkin to hold it. Slide the eggs onto a plate or slice of toast. Season and enjoy!
*For best results, only place the tray back onto the pan and start timing once the water has started to boil.
Best Use Instructions
- In order to figure out your doness preferences, we recommend you time the cooking. (every 15 seconds makes a difference in the cooking).
- Place the tray with the eggs inside of the pan only once the water has started boiling. Start the timer once you cover the pan. (This way you are timing it from the same starting point each time)
- A thin layer of oil spread in the entire inside of the cups is recommended.
- For easier cup removal, take the tray out of the pan and place it on the counter then remove the cups from the tray.
- Check that the pan is centered on the flame and that the fire is not coming up the sides of the pan.
- As with all stainless steel, Spotting may occur on the pan. This is caused from hard water. The best way to clean it is with a mixture of water and vinegar. To preserve the shine of the stainless steel, hand wash and dry.

1. How much water do you put into the pan?
Half of an inch. Remember that it is the steam and the heat that is cooking the egg. Too much water will cause it to bubble over and make the eggs soggy and wet.
2. How high of a temperature should I cook the eggs on?
After the water is boiling lower the temperature to a low simmer. If the water is at a roaring boil, it will overflow into the eggs. Remember, do to the nature of eggs, they cook fast and do not need a high flame.
3. Does the cover need to be on while cooking?
Yes. The eggs will not cook evenly and it will take a very long time without the cover on.
4. How long will it take to cook?
4-6 minutes from when the water boils. It all depends on how runny or well done you like the yolk. We recommend that in the beginning you watch the time carfully. You will then be able to work out to a science the exact timing depending on your personal taste.
5. Can I clean this in a dishwasher?
Yes. But as with all stainless steel, you will be able to keep the shine brighter for longer if you hand wash. Also, as with all antistick coating, handwashing will prolong its life.
6. Do I need to oil the cups?
It is recommended for an easier cleanup. Only very minimum oil is needed. You can spray the cups and then wipe out the oil with a cloth or napkin. The remaining thin layer is all that is needed for the easier cleanup. Remember that antistick will help a lot with the cleanup and taking the eggs out of the cups when done. However, due to the very sticky makeup of eggs it will not always do a perfect job.
7. Is this pan induction safe?
Yes. A magnet will stick to the bottom of the pan.
8. Is the pan suitable for a glass stovetop?
Yes. It has a flat and even bottom.
9. Can you cook less eggs than cups?
Yes. You can even just cook one.
10. Is this good for making Eggs Benedict?
Yes. It is perfect for Eggs Benedict.
