Who said that healthy has to be boring?! Healthy can be delicious without adding to your waistline. Here’s an easy fix for breakfast or a filling brunch. And it’s loaded with veggies for good measure!
Ingredients
- 4 large eggs
- 4 toasted pita bread
- 1 medium sized can of pre-cooked chickpeas
- 1 sprig of rosemary
- 1 clove of chopped garlic
- Half a cup of grated parmesan
- 1 tablespoon of butter
- Sea salt to taste
- Black pepper to taste
Steps
Prepare the eggs in the Eggssentials Egg Poacher Pan and set aside. Heat the butter. Add garlic and rosemary and sauté for a minute. Add the chickpeas and cook for a few minutes until coated with the buttery sauce. Take each slice of pita bread, put an egg inside and a scoopful of the chickpea mixture. Garnish with grated parmesan. Finish with a sprinkle of sea salt and pepper. Yum!
