Poached Eggs On A Bed Of Colorful Peppers

We all need our share of veggies and there is no better time to start. This simple breakfast dish makes for a pretty plate of bright peppers. Pepper it up!


Ingredients:

  • 4-5 bell peppers of all colors, deseeded and sliced thinly
  • 1 large white onion, chopped
  • 2 cloves of garlic, chopped
  • 2 teaspoon of balsamic vinegar
  • 1 teaspoon of sugar
  • 4 large eggs
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • Salt to taste


Steps:

Heat oil in a pan, add the onions and the garlic, sauté for a minute. Add the sugar and cook for two minutes. Add the pepper, cover and cook till they are soft. Add the balsamic vinegar, paprika and salt and cook till they are completely done. Next prepare the eggs in the Eggssentials Egg Poacher Pan and prepare the plates to serve. Top each plate of peppers with an egg and a small pinch of salt.
