Sweet Potato Hash With A Poached Egg

Ingredients

  • 2 large eggs
  • 5-6 large sweet potatoes, cut into cubes with their skin on
  • 2 large eggs
  • 2 cloves of garlic, chopped
  • 2 teaspoons of chopped rosemary
  • Sea salt to taste
  • 1 teaspoon of paprika
  • Olive oil for sautéing

Steps

Heat the oil in a pan, add the garlic and sauté. Next add the potatoes and onions, sauté for two minute on high flame and then turn the flame to medium. Add the rosemary, salt and paprika and sauté for 10 minutes. Once cooked, transfer to breakfast bowls or plates as you prefer.
