Sunny Side Up, Avocado and Smoked Salmon Breakfast Muffin

You can’t really go wrong with avocados and eggs. And here is another reason to love this combination. It is super easy, delicious and full of essential nutrients.

Ingredients

  •  3 avocados
  • 1 teaspoon of chili flakes
  • 3 large eggs
  • 4-6 slices of smoked salmon
  • 6 halves of English muffins, toasted
  • 2 teaspoon olive oil
  • sea salt to taste

Steps

Mash the avocados with a fork, add chili flakes, some salt and a little drizzle of olive oil. Coat your frying pan with a bit of olive oil. Make three sunny side up eggs. Take the toasted muffins, add some of the avocado mixture, place a slice of smoked salmon on top. Put an egg on top and then cover with the other half of muffin to make a cute breakfast muffin sandwich.
