Piadina With Poached Eggs And Cannellini Beans

If you’re looking for a filling breakfast then look no further than this healthy and complete starter of flatbread, beans and a poached egg. Carbs and proteins to energize you for the day.

Ingredients

  • 4 piadina or any flat bread
  • 4 large eggs
  • 1 large onion, chopped
  • 2 cloves of garlic, chopped
  • 1 big can of pre-cooked cannellini beans
  • 1 small can of passata or crushed tomatoes
  • 1 tsp of smoked paprika • 3-4 leaves of basi
  • Tablespoon of olive oil
  • Salt to taste

Steps


Heat oil in a pan, sauté the onions and garlic until they are cooked. Next add the passata and keep cooking for 5 minutes. Add the smoked paprika and give it another few minutes. Add the beans and cook for two minutes. Add the salt and basil and cook for one more minute. Prepare the eggs in the Eggssentials Egg Poacher Pan and keep aside. Warm each flatbread, serve the vegetable mixture on top and garnish with the eggs. Finish with a sprinkle of black pepper. Enjoy!
