Who said that healthy has to be boring?! Healthy can be delicious without adding to your waistline. Here’s an easy fix for breakfast or a filling brunch. And it’s loaded with veggies for good measure!
Ingredients
- 6 large eggs
- 1 medium sized onion, chopped
- ½ cup of chopped mushrooms
- ½ cup of chopped bell peppers, whichever color you like
- 1 tablespoon of olive oil
- Salt to taste
- Pepper to taste
Steps
Separate the egg whites. Then mix the egg whites with salt and pepper. Heat the oil on a nonstick pan, add the chopped onions and sauté till translucent. Then add the mushrooms and chopped peppers and sauté till cooked through. Add the egg whites and cook. Fold neatly. Enjoy!
