Cheesy Open Face Egg White Omelet With Sautéed Spinach

Ingredients:

  • 4 large eggs
  • 1 big bunch of spinach
  • 1 clove of garlic, chopped
  • 1 red onion, chopped
  • 1 fresh red chili pepper, chopped
  • 1 teaspoon of olive oil
  • Half a cup of shredded mozzarella
  • Salt to taste

Steps:

Separate the egg whites and then beat the egg whites with a little salt. Next heat the pan, add oil and sauté the onions. Add the egg whites. Once the sides and bottom are cooked top it with cheese. Cook it for a minute and then slide it onto a plate. Heat a bit more oil in the pan, add the garlic, chili pepper and spinach and cook until they are soft and cooked through. Add a pinch of salt to taste. Place the vegetable mixture on top of your open face omelet for a healthy, happy breakfast.
