Banana Pancakes

Bananas are our essential breakfast fruit and pancakes are the quintessential American breakfast dish. What better way to make breakfast paradise than to combine them both! Easy and delicious, these breakfast banana pancakes will make your Sunday morning breakfasts shine!

Ingredients

  • • 2 cups of all purpose flour
  • 3 tablespoons of brown sugar
  • 1 ½ teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 ½ cups of buttermilk
  • 1 cup of mashed, ripe banana
  • 2 large eggs • A pinch of salt
  • ½ cup of unsalted butter
  • 1/2 cup of sliced bananas for garnish
  • Maple syrup for serving

Steps

Mix together the flour, baking powder, baking soda, sugar and salt. In a separate bowl mix the mashed bananas, butter, eggs and buttermilk together. Combine the flour with the banana mixture and mix until combined. Heat a nonstick skillet with a pat of butter or nonstick spray. Add a scoop of batter to the pan. Cook on a medium flame until bubbles appear on top and the sides look cooked then flip the pancakes over and brown that side. Serve with sliced bananas and maple syrup on top.
